Abstract:
Our study aims to explore the antioxidant activity of 9 lactic acid bacteria strains, of which 8 have been newly isolated from anchovy Engraulis encrasicolus and the probiotic strain Bb12 reference. First, the strains were tested for reducing power of ferric iron Fe 3+ to ferrous Fe 2+ iron. Thereafter their trapping ability of free radicals was investigated by DPPH test. Finally, the test anti lipid peroxidation was carried out by the determination of reactive substances thiobarbutirique acid (TBARS). The results show that strains have a very good reduction power of up to 137.2%, while the minimum rate was due to a 39.5%. Regarding the free radical scavenging, all strains tested have proven their potential, rates ranged between 70.4 and 89.01%. Similarly, all the strains have proven anti lipid peroxidation effect with rates ranging from 81.5 to 96.6%.
