Lactic acid bacteria are a natural part of our environment and our diet. Their biotechnological properties have long been recognized as their role in the bio-preservation of magnets. The search for lactic acid bacteria strain producing antimicrobial substances was undertaken from lactic acid strains, identified by MALDI TOF / MS, belonging to the collection of the LSTPA laboratory. They have been tested for their antibacterial effect against pathogenic bacteria responsible for human infections.The inhibitory effect was demonstrated by the direct method of Fleming et al 1975 and the indirect well diffusion method, which made it possible to detect and observe the inhibition levels. The agent responsible for the inhibition was tested for by the well method. A production of bacteriocins has been demonstrated for certain lactic acid strains belonging to the genera Lactobacillus and Pediococcus.
