Abstract

The lamiaceae family, considered as one of the most advanced families, includes a wide variety of aromatic and medicinal plants, it presents typical characters very easy to recognize for a beginner botanist: herbaceous plant, quadrangular stem and the corolla has a shape of lip. In the phylogenetic tree the lamiaceae are at the level of the angiosperm, dicotyledonous and are part of the lamial order. Lamiaceae are mainly Mediterranean plants. Currently, essential oils are beginning to have a lot of interest as a source of bioactive natural molecules. They are being studied for their possible use as an alternative for the treatment of diseases and although other important biological properties, Hydrodistillation is the main method of obtaining oils from stems, leaves, flowers. By the diversity of the constituents that compose the essential oils finds very active substances (terpenoid, sesquiterpene ...) which have many biological activities; some have a strong antioxidant power such as eugenol, carvicol (ex : Salvia officinalis).
