Résumé:
Olive pomace is a residue of oil extraction from whole crushed olives, obtained either by pressure or by centrifugation. It is made up of an aggregate of pulps, fruit skins, husks, fragmented kernels and almond. It is rich in crude cellulose and poor in nitrogenous matter. Objective of this work to determine the physicochemical composition of olive pomace. For this, physicochemical analyzes are carried out such as the determination of the dry matter, the nitrogenous matter and protein, the crude cellulose, the fat, the pH and the humidity rate. The results obtained show that the olive pomace have of the rate of dry matter, ( of the rate of nitrogen and protein, ( of crude cellulose, ( of fat, a PH of 7 and ( humidity. To conclude that olive pomace is a by-product very rich in nutritional matter and preferably to valorize this waste in different areas.
