Résumé:
Lepidium sativum is used as a source of food and medicine and is effective against various diseases such as high blood pressure, arthritis, hepatotoxicity, infections, diabetes, cancer, bronchitis, etc. The aim of this study is to evaluate the anti-inflammatory activity, as well as the antioxidant activity of the ethanolic extract of L. sativum. A blood sample (10 ml) was taken from the body of a healthy person who does not take any type of drug or medicine and has no disease, the effect of the ethanolic extract of the garden cress plant on the anti-inflammatory activity in blood, by spectrophotometric methods. Where the latter showed inhibitory activity against inflammation of the erythrocyte membrane, and that is in the presence of Diclofenac solution. The anti-inflammatory activity of protein denaturation of watercress seed extract on egg whites has also been studied. The result is that it has a great ability to prevent protein denaturation by 70.25%. The antioxidant activity of DPPH was studied by a technique of reduction of free radicals, the results obtained showed that the extract can act as a deradicalant.
