Résumé:
A survey was conducted among 130 people in the town of Sidi Lakhdar, (wilaya of Mostaganem), in order to know the preferences of consumers for soft cheeses such as Camembert. The questionnaire included 20 questions to collect information on demographic and social variables and consumer preferences in relation to the organoleptic and commercial qualities of this type of cheese. The results show that the consumer knows these products to a certain extent. The selection criteria are mainly related to the brand and the quality of the product. Although the consumer is not satisfied with the quality and price of the cheese, it is highly appreciated.
