Résumé:
This research work represents the study of the chemical compounds present in the fruits of lemon citrus fruits located in Algeria, exactly in Mostaganem. The methods used are tests for the detection of the chemical compounds present in this fruit, using chemicals which are based on the appearance or the difference in color, and the effect of the extraction solvents on the chemical composition of the fruits. Lemons, Folin's color test was used by to detect the amount of polyphenol, aluminum trichloride to determine the amount of flavonoid, and then to assess antioxidant activity using the DPPH free radical test, the results were significant.
The results indicate a yield of crude extract is (9.8%). In addition, it is characterized by a high rate of total polyphénols (1125.25ugEA/mg of extract). A low flavonoid content of (110.78 ug EQ/mg of extract).
The results of this work allowed us to affirm that the antioxidant activity of lemon juice is essentially due to phenolic compounds.
