Rapeseed meal is a protein-rich product obtained during the oil extraction process. Up to now, they have been used as animal feed, without further processing. In this project, the proteins derived from rapeseed cakes obtained as waste from the oil industry were valorized with the aim of producing a protein drink for athletes. Firstly, a physicochemical characterization of the seeds and rapeseed meal was carried out. Dry matter, mineral, peptide, sugar and protein contents were assessed. The results showed that the rapeseed meal had a high nutritional value, with 94.53% dry matter, 4.05% mineral matter, 39.28% of proteins, 47.4 ±0.83 g/100 g of sugars and 9.60% of lipids. The rapeseed meal was then delipidated and enzymatically treated to increase their digestibility. After protein precipitation, a yield of 70% was obtained from delipidated rapeseed meal. A protein drink was then formulated, based on the nutritional requirements of athletes.
