Résumé:
The problem of development of the flesh-coloured sector on the sanitary plan remains always dependent on sanitary conditions and on the respect for the sanitary barrier.
To do it, our present study attèle to verify by bacteriological tests the possible presence or the absence of the salmonella, Escherichia coli and staphylococcus aureus through all the chain(channel) of reproduction of the chicken of flesh; as well as inputs to know the food and the water.
Concretely our bacteriological tests for the search(research) for pathogenic germs during all the progress of a breeding were realized on significant samples namely:
At the level of the hatchery, he was made a sampling of the surface of several rooms (reception, éclosoir, incubator, … …), a sample of 10 eggs and a sample de10 day chicks. At the level of the center of breeding, a sampling of the surface of several places after the underfloor space (ground, window, hopper.), a sample of 10 chicks of the beginning of growth (in 14 days); a sample of 10 chickens of the end of finish (in 56 days); and it is true through two different buildings (building n°7 and N 8). At the level of inputs, he was made a sampling of the food (Of starting up, growth and finish) and some water.
The bacteriological analyses did not reveal the presence of salmonellas, E. Coli and staphylococcus aureus, nevertheless our study revealed, the presence of the other opportunist bacteria which are not lesser importance both on the sanitary plan for the animal health as for that of the consumer.
So, the salmonella establishes one of the major causes of the infections of the human digestive tract bound to the consumption of food contaminated of animal origin; the meat of poultry and the eggs are strongly involved.
